Cayuga Cayuga 2023

Bright and high-toned with notes of spearmint, green apple, and Smarties®. We’d say it’s “crushable,” but Julia hates that word.

Grapes were sourced from Plane’s Block, the first commercial planting of Cayuga White in the country. Hand harvested on September 21, whole cluster pressed and spontaneously fermented in 65 percent stainless steel and 35 percent neutral barrel. The fermentation lasted three months and went through full malolactic. Bottled unfined and unfiltered, with 15ppm SO₂ added just before bottling.
