A selection of three wines to which the question of hand vs machine picking is especially relevant.
Cayuga Cayuga 2024: There’s a lot of Cayuga White in the Finger Lakes and basically none of it gets picked by hand. But Plane’s Block is a special site, and we think Cayuga White from here deserves the royal treatment. To make this chalky, linear white wine, we press the hand-harvested grapes immediately with no skin contact, a choice you can only make when picking by hand.
Good Spirit 2024: In our humble opinion, red hybrids basically need to ferment with stems. This is fermented 100-percent whole cluster, to capture the stems’ spice, tannin, and the soaring aromatics only possible with whole-bunch fermentation.
Cabernet Franc 2023: Whole cluster Cabernet Franc is rare, be it here in the Finger Lakes or in the Loire Valley. But this wine makes the case for why it shouldn’t be – oodles of peppery spice, combined with soaring aromatic lift thanks to carbonic maceration.
