100 percent Sabrevois, an Elmer Swenson hybrid, grown biodynamically by our friend Cory in Naples, NY.
Herbaceous, dark purple fruit, cinnamon spice lift, and lavender floral tones. Brooding and dark but still bright and energetic.

Hand harvested. 100 percent whole cluster, semi-carbonic maceration for five days. Pressed to neutral barrel, where it aged for one year before bottling.
