Definitely not our take on an American wine category made from Bordeaux grapes.

Merlot: maceration for a few days then pressed as a dark rosé.

Cabernet Sauvignon: Carbonic and semi-carbonic macerations for 10 days.

Cabernet Franc: Destemmed, 10 day maceration.

Tocai Friulano: Destemmed, 18-day maceration on skins.

Aged in a mix of stainless steel and neutral oak.

Cabernet Franc: New Suns, our home vineyard (west Cayuga Lake)

Tocai Friulano: Ventosa Vineyards (east Seneca Lake)
