Our second iteration of crackling wine, inspired by the Italian “rifermentato” sparkling wines we love. Three vinifera varieties - Blaufränkisch, Riesling, and Grüner Veltliner - from 2024 form the base wine. In 2025 we added fermenting Diamond juice and bottled it to capture CO2.
Blaufränkisch from Airy Acres on Cayuga Lake, Riesling from Standing Stone Farms on Seneca Lake, and Grüner from Rasta Ranch on Seneca Lake. All three were hand harvested, fermented, blended, and aged in combination neutral oak and stainless steel.
Disgorged by hand over the winter.
“Crackling wine” is a TTB approved style of sparkling wine that has lower pressure than Champagne. Neat!
